La digestion anaérobie n'existe pas. Pour créer un état sans oxygène dans un environnement Oxygèné, aérobie, il faudrait au bas mot plus de 3 milliard d'années. Ce n'est pas dans un flux en transit aéré qu'on peut créer un tel état et encore moins une fonctionnalité de dégradation de la matière organique transformée en boue.

There is a lot of books that can help you. To design such system it is necessary experience and I would recommend you to look for someone that has already designed it. Books and softwares are excellent tools but to design a system you need also experience. Regards
Dear Christian, if you like the pragmatic (less sientific) approach you might apply the simple DWA methodology (approved by thousands of digesters in Central EU). If more sientific you may use the IWA Anaerobic Digestion Model.
